As a Doctor in Food Science and a Postdoctoral Researcher in the Department of Food Science and Technology, my main research interests are to investigate the mechanisms involved in the health benefits associated with functional foods, mainly probiotics. My research is focused on understanding how fermented food matrices may impact the survival, gastrointestinal stress resistance, and functional potential of probiotics.
